7 things you need to do when you come visit Japan

Teriyaki (照り焼き) is one of the more well known Japanese dishes in the west. While there are many fake “Japanese dishes” being served or fake recipes that are far from how it is actually supposed to taste like, the western version of Teriyaki is actually not too far from what it is supposed to taste like. Perhaps, one of the reason why Teriyaki is so popular in the west is because its very difficult to actually screw up the cooking process. It will taste relatively good no matter how you cook it. However, if you want to cook really good Teriyaki which will make your Teriyaki stand out from the rest, there is no better way than to follow a proper recipe from Japan.

・Chicken Thighs (with skin) … 4 slices
・Garlic …1-2 cloves
・Soy Sauce… 10 Tablespoon
・Mirin…4 Tablespoon
・Cooking Sake…4 Tablespoon
・Sugar…4 Tablespoon
・Chilli Pepper…4 cloves (remove seeds)
(Serving for 4 people)

1. Pour oil and heat the pan. Once it is good to start cooking, cook the side with the skin first and flip it over once the skin starts to seem a little bit crispy.
2. Shred the garlic and mix it together with the Soy Sauce, Mirin, Cooking Sake, Sugar and Chilli Pepper.
3. Once both sides are cooked, pour the condiments on to the pan.
4. Turn the grill to low to medium heat so that the chicken simmers in the sauce.
5. Once the condiments start boiling, place a lid on top of the pan.
6. After the condiments start become more viscous, the chicken and the sauce is ready to be served!
