Ponzu (ポン酢)

Ponzu, a Japanese citrus dipping sauce

Ponzu (ポン酢) is a Japanese citrus sauce, made with different kinds of citrus, such as Kabosu, Yuzu and Sudachi. The citrusy and tangy flavor of the sauce goes so well with meat and the refreshing taste makes it one of the ultimate and must-use condiment especially in the summer.

A little bit about Ponzu (ポン酢)

 

Ponzu (ポン酢) is a Japanese citrus sauce which is used on different kinds of dishes. Depending on the brand and the type of Ponzu, different citrus are used but they are primarily made of either Kabosu, Sudachi or Yuzu.

Ponzu is a delicious on fatty meat as the citrusy and tanginess of the sauce helps it neutralize the taste of the fat on meat (This is why lemon goes so well with Tonkatsu for example. You can also opt to eat Tonkatsu with some shredded Japanese Radish and Ponzu). The refreshing taste allows you to eat much more than you would using other sauce because you will not feel overwhelmed by the richness of the fat. 

 

This refreshing taste of the sauce and the citric acid inside it makes it perfect for a meal in the summer to help you get revitalized and help you get through the summer heat.

Below are some of the more famous Japanese dishes that requires Mirin in the preparation of the dish.

・ Shabu Shabu (しゃぶしゃぶ)

・ Shabu Shabu Salad (しゃぶしゃぶサラダ)

・ Oroshi Ponzu Gyudon (おろしポン酢牛丼)

・ Tonkatsu (とんかつ)

 

Where can I find Ponzu (ポン酢)?

Ponzu can potentially be found in your nearest Asian supermarket. However, you may not have access to one depending on where you are, in which case, it might be best to order it on Amazon. While you may find cheaper knock-off versions made by non-Japanese companies, some condiments may taste completely different to what it really is, and therefore, we advise you to purchase ones from established Japanese brands, such as Kikkoman (specializes in Soy sauce), Takara (specializes in liquor based sauces), Mizkan (specializes in Vinegar). In Japan, the ponzu called ‘Ajipon’ made by Mizkan is one of the most favorite and this can also be purchased on Amazon. It might be a little bit more expensive, but if you are making the effort, spending much time and money to make the meal, you might as well get the proper one in order to make sure it does not turn out wrong. Mirin also comes in large amounts, whereas the actual amount that you use each time is not much so it is definitely worth getting a legit one.
